Cherry Ice Cream with Chocolate

Since I in the beginning of the summer, saw the first imported cherries, I’ve had a crawing for cherry ice cream with chocolate pieces. I don’t know why, I just have. I was visiting some relatives in the holiday, and was so lucky to get a few kilos of fresh cherries from their tree in their garden. That had to be utilized to satisfy my ice cream fetish ;)

The ice cream has to be eaten within a few days, because it is a rather simple recipe that doesn’t require heat nor eggyolks. When the ice cream maker does it’s work well, you get a nice ice cream anyways. It just doesn’t last for as long in the freezer (which isn’t a problem in our house anyways).

It was almost a shame to destroy the beautiful berries, but it is not as exiting to eat ice cream with cherry pits in. ;)

Cherry Ice Cream with Chocolate Bits
500g whole ripe cherries
250g caster sugar
The seeds from half a vanilla pod
2 dl double cream
2 dl milk
1 tbsp. kirsch (optional)
50g chopped chocolate (56% cocoa)

Rinse the cherries, and remove the pits. In a blender, combine sugar, cherries and vanilla, and blend untill its a smooth mixture.

Pour the mixture into a bowl, add cream, milk and kirsch, and stir. Leave it in the fridge untill it is cold, and freeze the mix inan ice cream maker.

Just before the ice cream is done, add the chopped chocolate, and leave it in for 30 seconds to get mixed in.

Eat straigt away, or put it into the freezer untill needed.
